AYTOMATIC ALD YEAST PRODUCTS PRODUCTION LINE
The ALD is a very flexible and productive line that handles dough gently.
Suitable for various types of bakery and confectionery dough (with less than 70% moisture content) such as wholemeal, rye, hard, soft, with or without yeast, biscuit dough, gluten-free, even dough with dry pieces (or other shredded food material).
The line consists of an extruder, a seeding unit (sifter) and optionally a sheeting unit.
The extruder uses two specially designed (patented) rollers to extract the dough.
The contour and shape of the products are determined by (interchangeable) moulds.
In combination with various additional systems, it is capable of producing many different types of products.
Using a guillotine, strips of dough can be cut to the desired length. (Rivets, nuts, baton sale, croutons, etc.)
Using the horizontal knife, we can produce cookies in any shape we want, according to the selected mold.
The braiding unit produces braided biscuits (braid cookies).
By adding a filling unit, we can produce filled products.
The unique patented ring system enables us to produce dough rings in various diameters (bun, simit, govrige etc.)

The seeding unit (SD sieve) allows us to sprinkle seeds (or sugar, salt, powder, nuts, syrup, egg, etc.) on the products.

– Choice of wire or fabric strips
A tunnel oven of the same width can be joined directly to the ALD line. If we have pan ovens, we can use the deposition unit (DP), which can evenly distribute the products on baking sheets or feed a tunnel oven with a larger width than the ALD.
The DP is an automatic device for depositing and aligning dough products (breadsticks, biscuits, etc.) on baking sheets.

Details / Clarifications:
*1: Dough weight before baking and rising.
*2: Product dimension and line width determine the number of products produced in each run.
e.g. A typical ALD600 biscuit mould has 9 outputs. The number of cookies produced each hour is equal to 9 times the number of hits per hour
